troy ounces = grams ÷ 31.1035
Example: 250 g ÷ 31.1035 = 8.038 oz t.
Divide the grams by 31.1035. A 50 g bar is 1.608 oz t, and a 100 g bar is 3.215 oz t. For small pieces, keep four decimal places: a 5 g bar is 0.1608 oz t.
Use this factor only for precious metals. A kitchen or postal scale set to ounces uses the lighter avoirdupois ounce of 28.35 g, so the same 100 g bar would read 3.527 oz there. Mixing up the two ounces changes the answer by almost 10%.
Why do gold and silver use troy ounces?
Because the rules for selling them allow it. NIST's precious metals guidance says gold, silver and platinum priced by weight are sold in troy weight or in SI units such as grams. When grams are used, a chart that converts them to troy units has to be displayed.
The troy system itself is old. According to NIST Handbook 44, Britain abolished the troy pound in 1879 but kept the troy ounce, and the troy pound is still legal in the United States, though rarely used.

It is defined as 480 grains, while the ordinary ounce has 437.5 grains, and NIST notes the grain is the same in both systems. A grain is 1/7,000 of a pound, or 64.79891 mg, so 480 grains come to exactly 31.1034768 g.
