Why weight depends on the ingredient

A tablespoon is a small, fixed volume, and each ingredient packs a different weight into it. Butter comes close to water. Granulated sugar is a little lighter per spoon, and all-purpose flour weighs only about 7.8 grams per level tablespoon, about half the butter figure.

Yeast shows why this matters in baking. A tablespoon of active dry yeast weighs about 12 grams, so a recipe that asks for 6 g needs 0.5 tablespoon, half a spoon rather than a whole one.

Level or heaping spoons?

Every figure here assumes a level spoon: fill it, then sweep off the excess with the back of a knife. A heaping tablespoon holds noticeably more, and how much more depends on the food and on the cook.

About 6 tablespoons, using the USDA weight of 14.2 grams per tablespoon. In US sticks, that is three-quarters of a stick, since one stick holds 8 tablespoons. Slicing that much off a cold stick is easier than spooning soft butter.

How many tablespoons is 150 grams?

For all-purpose flour, about 19.2 tablespoons, for granulated sugar 12, and for butter about 11. Amounts that large are easier to measure in cups: 150 g of flour is about 1.2 cups.
