How to measure butter accurately
Sticks are the easy case: cut straight through the paper while the butter is still cold. Land O'Lakes, for one, prints tablespoon marks on its stick wrappers for exactly this job.
Butter from a tub or a big block takes more care. Press it into a dry measuring cup or spoon with a spatula until no air pockets remain, then level the top with a knife. Soft butter dropped in by the spoonful leaves gaps, so the cup comes up short.
A kitchen scale removes the guesswork. It reads the same whether the butter is cold, soft or melted, because melting does not change weight. Weigh when a recipe gives butter in grams, and for pastry or shortbread, where the balance of butter and flour decides the texture.
