How to measure shredded cheese accurately
Drop shredded cheese into a dry measuring cup and leave it loose, pressing it down only if the recipe says "packed". Shreds are full of air pockets, so pressing squeezes in much more cheese than the recipe expects. Level the top by hand.
Fine and coarse shreds fill a cup differently, and cheese you grate at home may not match a bag from the store. USDA itself has two figures for shredded cheddar: a newer lab measurement came in slightly lighter per cup than the older household portion this site uses.
The most reliable method is to weigh the block before you grate it. Shredding does not change weight, so a recipe's ounces or grams can be measured straight from the block, with no cup at all.
Finely grated hard cheese, such as Parmesan, has its own weight per cup, and the numbers here do not apply to it. They are for cheddar-style shreds, the kind UK recipes call grated cheese.

Shredded, diced and sliced cheese
Shape changes the volume, not the weight. USDA's cup of diced cheddar weighs about a sixth more than a cup of shreds, as the table of other kinds above shows, because cubes leave fewer air gaps than loose strands.
Mozzarella shreds weigh almost the same per cup as cheddar shreds in USDA's data. The conversions on this page therefore work for pizza as well as for macaroni and cheese.
The by-the-piece table above lists USDA's weight for one slice of cheddar. Four of those slices weigh about as much as a cup of shreds, which helps when a recipe asks for shredded cheese and you only have slices.
