Why weight depends on the ingredient
Pounds measure weight, while pints measure the space a food takes up. Milk and butter fill that space solidly, but flour, cheese and chopped vegetables do not.

Is a pint really a pound?
For water in US pints, nearly. The rhyme "a pint's a pound the world around" rounds a pint of water, 16.7 ounces, down to the 16 ounces in a pound.
